Description |
A round cast iron rosette iron. On the outside is a raised relief surface of connecting semi-circles. On the inside is the same design except the connecting semi-circles were stamped inwardly. The handles are cast iron as well and are threaded and screw into the bottom of the irons. They were used to make rosette pastries. Rosettes were and are made using intricately designed irons. The iron is heated to a very high temperature in oil, dipped into the batter, then re-immersed in the hot oil to create a crisp shell around the metal. The iron is immediately removed and the rosette is separated from the iron. Usually, the edges of the rosette are dipped into frosting or sugar. |
